A creamy pesto dressing with carefully poached potatoes, carrot, peas, fresh celery, red onion, olives, toasted nuts or seeds and delicious bitter greens and radicchio
Preparation(s): Gently toss salad in a large bowl. Season to taste. Toss again carefully. Add dressing as desired!
Or eat it hot! Chef's favourite way to enjoy this salad is gently sautéed over low heat. With a touch of avocado oil or oil of your choice onto the pan, add toppings first. Careful not to burn. Once potatoes and vegetables are hot and slightly golden, remove to a plate. Using the same pan add bed of salad greens and saute until they are bright in colour. (Yes, you can cook romaine. Enjoy!)
Potatoes are rich in vitamins, minerals, antioxidants and fiber. Making them quite filling, & may help curb hunger pains and cravings.
